Recipe: Rocky Road Recovery

If your ready-for-summer body exercise regime leaves you parched and peckish, you simply must treat yourself with this rocky road inspired smoothie by celebrity chef, Luke Hines.

He is all about celebrating real food that’s clean, sustainable and phenomenally tasty!

“Rocky road is such a popular treat that I wanted to give you guys that same phenomenal taste without any of the processed ingredients,” he says.

“So just shut your eyes and imagine that distinctive dark chocolate, marshmallow and nut combination in each and every sip of this incredible smoothie.

“Due to the sugars from the berries and dates in this one, I like to use it as a recovery drink after a strenuous workout.”

This filling elixir is vegan friendly and gluten free.

Ingredients (Serves 4)

250 m l (1 cup ) almond milk (the book contains a recipe for vanilla almond milk, which is perfect for the recipe!)

1 tablespoon cacao powder

70 g (½ cup ) mixed berries, fresh or frozen

75 g (½ cup ) hazelnuts , plus extra to serve

2 medjool dates, pitted

2 tablespoons shredded coconut

4 ice cubes

Fresh raspberries to serve

Method

Blitz together the almond milk, cacao powder, berries, hazelnuts, dates, shredded coconut and ice cubes in a high-speed blender until smooth. Garnish with the fresh raspberries and a few extra crushed hazelnuts. Serve and enjoy!
