Recipe: 10-Minute Zucchini Wraps

Beauty isn’t skin deep: it comes from the inside. This is the underlying message that has shaped Janine Tait’s journey in the aesthetics industry and what motivated her to create Bestow Beauty, a range of inner beauty products derived from superfoods.

New Zealander Janine had been a dermal therapist for more than 30 years when she hit a wall and nearly gave her vocation away.

“I’d reached a point where there were some skins I just couldn’t treat, in particular a number of clients with acne,” she says.

“No matter what treatments or products I used and recommended to these clients, their conditions just wouldn’t improve to any significant degree. This led to a major crisis of professional confidence.

“It was extremely fortunate that around that juncture I met a woman – Janice Sarre Smith – who was decades ahead of her time. She worked holistically with skin.

“Janice made me realise that skin is built from the inside out, yet I was treating it one-dimensionally, on the outside.

“If you want to achieve beautiful, healthy skin, you have to go deeper. This led me to study nutritional medicine, and then I specialised in dermal nutrition.”

Janine has also published several cookbooks packed with healthy, delicious recipes. 10-Minute Zucchini Wraps are from her latest book, SAVOUR.

They will keep in an airtight container in the fridge for several days so that you will have an easy meal at the drop of a hat. They can also be frozen for a later date.

INGREDIENTS

2 zucchini, grated
1⁄2 teaspoon of Himalayan or sea salt
1 large egg, beaten
1⁄4 teaspoon of cumin, ground
1 1⁄2 tablespoons of rice flour
1 tablespoon of Italian parsley, chopped

METHOD

Preheat oven to 200 degrees celsius. Sprinkle the grated zucchini with salt, stir and place in a sieve over a bowl. Rest for 5-10 minutes and then gently press to remove excess liquid.

Add the zucchini to a large bowl and mix in the remainder of the ingredients. Cover the oven tray with baking paper. Scoop about 1⁄2 cup of mixture and press down to form a thin circle about 10cm in diameter. Repeat for the remainder of the mixture.

Bake wraps for about 25 minutes, or until the wraps look crisp and brown around the edges. Let them cool for 10 minutes and then peel of the baking paper.

Top with your desired filling and wrap! Also great for using up leftovers or serving unfilled with soup.
