These mouth watering chocolate protein muffins make for the perfect 3pm perk-up!
Ingredients:
- 6 scoops of chocolate protein powder
- 1 1/4 cup of unbleached self raising flour
- 1 tsp. of baking powder
- 3 tbsp. stevia
- 2/3 cup unsweetened cocoa powder
- 3/4 cup light olive oil spread
- 3 egg whites
- 1 egg
- 1 cup skim milk
Method:
- Preheat oven to 190°C and grease a muffin tin.
- Combine all dry ingredients in a large bowl.
- With an electric mixer, slowly add wet ingredients until combined
- Place into prepared muffin tin and place in the oven for 15-20 mins or until just cooked through.
- Serve while warm.
